  • 12 grams [[garlic powder]]
  • 24 grams [[smoked paprika]]
  • 5 grams [[black pepper]]
  • 40 grams [[salt]]
  • 15 grams [[brown sugar]]
  • 100 grams [[water]]
  • 80 grams [[dijon mustard]]
  • 1 [[sheep casing]]

Steps

  • Fine grind meat, mix with ground salt and spices.
  • Mix with cold water and dijon mustard to emulsify before encasing.
  • Tastes best when made 24 hours before grilling.
