- 1000 g [[pork shoulder]]
- 12 g [[Salt]]
- 12 [[Ricard or Pastis]]
- 6 [[Fennel seeds]]
- 4 [[black pepper]]
- 3 [[dried parsley]]
Steps
- Grind meat on highest setting and mix with salt and spices.
- Encase in pork casings.
- Let sit 24-48h in fridge before serving to allow spices to truly flavour the meat.
