Grind 1000g pork shoulder on highest setting and mix with 12g Salt, 12 Ricard or Pastis, 6 Fennel seeds, 4 black pepper, and 3 dried parsley. Encase in pork casings. Let sit 24-48h in fridge before serving to allow spices to truly flavour the meat. Total time: 1h
