  • 800 g [[pork shoulder]]
  • 200 g [[pork belly]]
  • 12 g [[Salt]]
  • 2 g [[Poivre]]
  • 1 g [[Thym]]
  • 1 g [[Muscade]]
  • 2 g [[garlic confit]]
  • 1 [[pork casings]]

Steps

  • Grind meat on highest setting and mix with salt and spices.
  • Encase in pork casings.
  • Let sit 24-48h in fridge before serving to allow spices to truly flavour the meat.
