Ingredients
- 1.5 kg [[center cut pork belly]]
- 30 g [[salt]]
- 5 g [[salt]]
- 30 g [[dark brown sugar]]
Steps
- Score the skin side of the pork belly to form 1cm by 5cm scores (these will be useful to cut at the end of the cook).
- Mix salt and dark brown sugar together and apply to the bottom and sides.
- On the top take the smaller amount of salt and apply to skin side.
- Place on pan with a rack to dry in fridge for 12h.
- Place in 250F oven for 2.5-3h or until internal temperature reaches 195F.
- Once cooked transfer pork skin side up to a plate and transfer rendered fat into a measuring cup.
- Rest meat and allow oil to cool down to room temperature.
- Place pork skin side down in a skillet with the oil and crisp up on medium-low to medium heat until skin is nice and crispy.
