Ingredients

  • 1.5 kg [[center cut pork belly]]
  • 30 g [[salt]]
  • 5 g [[salt]]
  • 30 g [[dark brown sugar]]

Steps

  • Score the skin side of the pork belly to form 1cm by 5cm scores (these will be useful to cut at the end of the cook).
  • Mix salt and dark brown sugar together and apply to the bottom and sides.
  • On the top take the smaller amount of salt and apply to skin side.
  • Place on pan with a rack to dry in fridge for 12h.
  • Place in 250F oven for 2.5-3h or until internal temperature reaches 195F.
  • Once cooked transfer pork skin side up to a plate and transfer rendered fat into a measuring cup.
  • Rest meat and allow oil to cool down to room temperature.
  • Place pork skin side down in a skillet with the oil and crisp up on medium-low to medium heat until skin is nice and crispy.
